Nigerian Fried Rice

Nigerian Fried Rice

A colorful and flavorful fried rice dish that pairs perfectly with our jollof sauce. Great for special occasions.

Ingredients

  • 3 cups long-grain rice
  • 2 cups mixed vegetables (carrots, green beans, green peas, sweet corn)
  • 1 cup diced chicken or beef
  • 2 medium onions, diced
  • 3 tablespoons vegetable oil
  • 2 tablespoons curry powder
  • 1 tablespoon thyme
  • Salt and pepper to taste
  • 2 cups chicken stock

Instructions

  1. 1 Cook the rice until parboiled (about 70% done), then drain and set aside.
  2. 2 Heat oil in a large wok or pan over high heat.
  3. 3 Add diced onions and stir-fry for 2 minutes.
  4. 4 Add the meat and cook until browned.
  5. 5 Add the mixed vegetables and stir-fry for 3-4 minutes.
  6. 6 Add curry powder, thyme, salt, and pepper. Mix well.
  7. 7 Add the parboiled rice and stir to combine.
  8. 8 Pour in the stock, cover, and cook on low heat for 10-15 minutes until rice is fully cooked.
  9. 9 Fluff with a fork and serve hot!
