Coconut Rice

Coconut Rice

Fragrant coconut rice cooked to perfection. A delightful alternative to jollof rice with a tropical twist.

Ingredients

  • 2 cups long-grain rice
  • 1 can coconut milk (400ml)
  • 1 cup water
  • 1 medium onion, sliced
  • 2 tablespoons vegetable oil
  • 1 teaspoon curry powder
  • Salt to taste
  • Optional: 1/2 cup diced vegetables

Instructions

  1. 1 Rinse the rice thoroughly and set aside.
  2. 2 Heat oil in a pot over medium heat. Add sliced onions and sauté until translucent.
  3. 3 Add curry powder and stir for 30 seconds.
  4. 4 Add the rice and stir to coat with oil.
  5. 5 Pour in coconut milk and water. Add salt.
  6. 6 Bring to a boil, then reduce heat to low.
  7. 7 Cover and simmer for 25-30 minutes until rice is cooked and liquid is absorbed.
  8. 8 If using vegetables, add them 10 minutes before rice is done.
  9. 9 Fluff with a fork and serve hot!
