Egusi Soup

Egusi Soup

A traditional Nigerian soup made with melon seeds. Rich, hearty, and perfect with pounded yam or fufu.

Ingredients

  • 2 cups ground egusi (melon seeds)
  • 500g assorted meat (beef, goat meat, or fish)
  • 1 cup palm oil
  • 2 cups chopped spinach or bitter leaf
  • 2 medium onions, chopped
  • 2 scotch bonnet peppers
  • 2 seasoning cubes
  • Salt to taste
  • 1 cup stock or water

Instructions

  1. 1 Season and boil the meat until tender. Set aside with the stock.
  2. 2 Heat palm oil in a large pot over medium heat.
  3. 3 Add chopped onions and fry until translucent.
  4. 4 Add the ground egusi and stir continuously for 5-7 minutes until it forms a paste.
  5. 5 Add the meat stock and stir well to combine.
  6. 6 Add the boiled meat, seasoning cubes, and salt. Simmer for 10 minutes.
  7. 7 Add the chopped vegetables and peppers. Cook for another 5-7 minutes.
  8. 8 Adjust seasoning if needed and serve hot with pounded yam, fufu, or rice.
